Sabor Judio – Avocado Egg Salad

Ingredients

3 large avocados, peeled, pitted and roughly chopped

2 tablespoons mayonnaise or Greek yogurt

2 teaspoons fresh lime juice, plus more as needed

¼ teaspoon kosher salt, plus more as needed

1/8 teaspoon freshly ground pepper

4 hard-boiled eggs, peeled and chopped

Directions

In a medium-sized bowl, use a fork to mash together the avocado, mayonnaise, lime juice, salt and pepper. 

Fold in the chopped eggs. Taste and add more lime juice or salt as desired. Serve immediately. Serves 2-4
