Lettuce Wrapped Carne Asada

The taco serves as the perfect canvas for any grilled or braised meat. It is simple, neutral in flavor, and is essentially the best way to transport anything from your hand to your mouth without the use of a fork. Since our Ashkenazi brothers and sisters are not allowed to eat corn during Passover, it seemed fitting to make a recipe for a lettuce wrapped taco with my favorite grilled meat, carne asada.

Ingredients

FOR THE CARNE ASADA MARINADE

  • 2 lbs steak; my personal favorites are hanger, skirt, and rib eye
  •  4 cups orange juice
  •  6 cloves of garlic
  •  1 yellow onion, sliced or shredded
  •  1 bunch of cilantro
  •  1 cup olive oil

FOR THE TACOS

•2 heads of romaine or iceberg lettuce

• 2 roma tomatoes diced

• 1 jalapeno diced

• 1 red onion diced

• 1 bunch of chopped cilantro

• 2 limes

• Salt and pepper

Prep

  • Blend the ingredients together for the marinade and allow to sit in the refrigerator overnight
  • Take the steaks out of the marinade and pat dry with a paper towel
  • Heat up a grill to high heat and sear the steaks on each side to your desired doneness and then set aside to rest
  • Pull apart the head of lettuce while being careful to not break them
  • Mix all the ingredients for the pico de gallo in a bowl and squeeze the lime juice into the salsa
  • Slice the steak against the grain, place into the lettuce cups, and top with salsa
